Here's a twist from my kitchen.
Smoked Turkey Brine
2 cups orange juice
1 cup kosher salt
2 Tbsp minced garlic
1 Tbsp minced ginger
½ cup of honey
10 - 3 inch sprigs of fresh thyme
spent citrus rinds (for smoking)
Water to cover turkey in a large bucket

Wow. How long did it take you to smoke that whole thing?? Amazing work
ReplyDeleteIt was a 23lb turkey. 4.5 hours on the smoker at about 225. Finished in 250 oven for 1.5 hours.

ReplyDeleteWe are in Southern, NH and typically use the grill all year round. I didn't doo too much grilling this winter just cause I was always so tired of shoveling the snow, but we often wheel the grill out into the driveway if we want something grilled! Saturday last week came and it was raining all day. I popped up the QuikShade and setup the smoker underneath it so it stayed dry and so would I when I was out there!
